Simple, Light and Delicious Cinco de Mayo Taco Salad

This scrumptious taco salad recipe is a favorite of ours to celebrate Cinco de Mayo with. The smooth Thousand Island dressing really blends well with the ground beef and taco seasoning. And best of all, you can prepare it in mere minutes!

Ingredients

  • 1 lb. lean ground beef
  • 1 package of low-sodium taco seasoning
  • 1 head of lettuce (broken up)
  • 8 oz. grated light sharp cheddar cheese
  • 2 large tomatoes (diced)
  • 2 cups of light or baked tortilla chips (broken up)
  • 8 oz. of reduced-fat Thousand Island dressing

Preparation

  1. Brown the meat in a skillet with the taco seasoning; let cool
  2. Add the lettuce, cheese and tomatoes
  3. Just before serving, add the tortilla chips and dressing
